I mentioned a few posts ago that I’ve been making a lot of old favorites and trying to freshen up the menus with new side dishes. This is another one that I’ve been making recently.
I’m always looking for new ways to slip more sweet potatoes into meals. This simple recipe came about when I wanted a sweet potato side to have with curry. You don’t have to save this for Indian food, though. These are great with all kinds of sandwiches and burgers, too.
The spice mix here has a bit of sugar in it. Sweet potatoes don’t need any sugar themselves, but when mixed with the spices here, it creates a delicious glaze. If you have the time and inclination, this is even better with homemade garam masala.
- 2 medium sweet potatoes, about 1-1/2 pounds
- 1/2 teaspoon garam masala
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander
- 1/4 teaspoon salt
- 1 teaspoon sugar
- 1-1/2 tablespoons canola oil
Preheat oven to 400 F. Oil a large baking pan. Peel the sweet potatoes and cut into bite-size pieces. Mix spices, salt, and sugar in a small bowl. Toss the sweet potatoes with the canola oil, the sprinkle with the spices and toss again to distribute the spices evenly. Transfer the sweet potatoes to the pan. Bake for 30 minutes or until tender, tossing once or twice while cooking.
